Margarita Carrillo debuts a new menu to the Playa Del Carmen hotspot
PLAYA DEL CARMEN, MEXICO: Cachito, The Reef 28’s signature restaurant, is proud to announce the debut of a newly redesigned menu by internationally renowned Chef de Cuisine, Margarita Carrillo. The new menu is an exciting new feature for the trendy, adults-only, boutique hotel in the heart of Playa del Carmen. Chef Carrillo herself will be overseeing the menu with plans to focus on seasonal offerings. While dishes will always be traditional, guests can expect interesting and innovative items including everything from coconut and chili-based sauces to dishes infused with flowers, depending on the time of year.
In 2016, Carrillo was recognized by the government as Culinary Ambassador of Mexico, and the Conservatory of Mexican Gastronomic Culture appointed her Vice President of Gatronomic Projects. “Chef Carrillo is the ideal professional to carry out the culinary redesign of Cachito,” said German E. Fayad S., CEO and Managing Director of The Reef Resorts and Spa. “She is regarded as one of the greatest authorities on Mexican cuisine in the world, and we are all about offering our guests the best of the best. For Carrillo, working with the The Reef 28 was an opportunity that felt like a natural fit. “I was already a fan of the brand as a guest and I love all the food and the excellent chefs at the resorts,” said Carrillo. “However, I saw an opening to do more to represent everything that Mexican gastronomy has to offer. The Reef 28 is the ideal venue because of its commitment to authenticity, quality and giving their guests a memorable experience.”
Cachito’s original menu focused on Mexican fare that was more familiar in North American and European markets. Chef Carrillo’s redesign is a turn to more complex and nuanced dishes that showcase the profound flavor profile of Mexican cuisine. “Mexico has a rich culinary life unlike any other country in the world,” said Carrillo. Guest will enjoy specialty favorites like Pitianes, almendrados, encacahuatados, and pescado a la Veracruzana.
Aside from her successful career as a chef, Carrillo is also an author, teacher, lecturer and entrepreneur. “I am passionate about research and I believe it’s important to educate people about Mexican food,” said the Mexico the Cookbook author. “In order to do that effectively, you have to get out of the kitchen from time to time.”
